Meet Paul Clarke, our Chef Patron at Firefly restaurant in Dorset, Paul brings over 16 years of expertise to the menu, inspired by land and sea. As a Two AA Rosette-awarded chef, Paul’s cooking is rooted in seasonality, using locally sourced ingredients in every dish, prepared entirely from scratch. Within an open, exposed kitchen, the craft is at the heart of the experience, offering a glimpse into the precision and care behind every plate.

Close to the Dorset Jurassic Coast, fresh and locally sourced seafood sits at the centre of the menu, alongside a selection of timeless, comforting dishes, from much-loved favourites to familiar classics, designed for relaxed, family-friendly dining and crafted with the same care and attention throughout.
